Chinese Chicken Salad
Shanna Miller
My family loves this salad.
1/2 lb. cooked shredded chicken (can use a Costco rotisserie chicken)
1 head lettuce
4 green onions
3 Tbsp. toasted slivered almonds
3 Tbsp. toasted sesame seeds (1/2 black and 1/2 white)
Won ton skins, cut in quarters and fried in hot oil
Rice sticks, puffed in hot oil (optional)
Dressing:
2 Tbsp. sugar
1 tsp. salt
1 tsp. Accent
3 Tbsp. white vinegar
1/2 tsp. black pepper
1 Tbsp. sesame oil
1/4 cup vegetable oil
Mix together all dressing ingredients except the oils in a blender. Very slowly add the oils while blending to emulsify the oils into the dressing. To intensify the dressing flavor, I add the hot sesame seeds (right after I've toasted them) and allow to stand overnight.
