Cake Sandwich Cookies

This is my most requested recipe. I originally got it from my dad, who after trying them at work, asked for the recipe from a coworker in the Radiology Department at the Salt Lake Clinic. I still remember how proud he was of himself for bringing the recipe home. I'm afraid they bring out the worst in us though - they make us selfish - according to my family I'm not allowed to give them away and we've been known to hide them from each other. As I hide my fair share I remind them that charity never faileth. They are wonderful warm, room temperature, or right out of the freezer.

Cookie:
2 Devil's food chocolate cake mixes (I like Pillsbury Moist Supreme)
4 eggs
1 tsp. vanilla
1/2 cup butter, melted

Filling: (Use "a little more" of each to make "a little more" filling - you can never have too much)
4 oz. cream cheese, softened
1/2 cup butter, softened
1 tsp. vanilla
2 cups powdered sugar

Mix cookie ingredients in stand mixer. Spray hands with cooking spray and roll dough into small balls. Place on parchment paper covered cookie sheets (or greased cookie sheets). Bake at 350 degrees for 8 minutes. Do not over bake. Cool.

For filling, cream butter and cream cheese. Add vanilla. Gradually add powdered sugar until smooth. Put a tablespoon of filling between two same sized cookies and press together. (Then quickly eat two and hide some in the freezer for yourself before anyone sees.Then be charitable and bring me one.)
