Fettuccine Alfredo "Lite"

A one pot meal! A favorite standby when I need to make something quick.

8 oz. fettuccine pasta, linguine or other pasta
1 tsp. butter
2 cloves garlic, minced
1 cup evaporated milk
3 Tbsp. grated parmesan cheese or romano cheese
1 tsp. basil
1/8 tsp. nutmeg
Pepper to taste


Optional items:
1 cup chicken, canned or baked
Peas or broccoli
Fresh parsley


Cook pasta and drain. In warm pot, melt butter and add garlic. Return pasta to pot and stir to coat. Add milk, cheese, and herbs. Add chicken and vegetables if desired. Cook over medium heat until sauce thickens, stirring only 3-4 minutes. Serve immediately
