Hash Brown Breakfast Casserole
Carol Middleton
This casserole has been served at many ward bridal brunches, and it turns out consistently the same, is easy to make, and is very filling. It is also wonderful for Christmas morning. With some fruit and a muffin you have a nice breakfast. It is easier than serving hash browns, ham, and scrambled eggs all done separately..and you can fix the fruit while it cooks.
1 large bag frozen hash browns
3 Tbsp. butter
Put the hash browns in a 9 x 13 and drizzle melted butter over them.Bake 25 minutes, at 425 degrees in the oven.
Add:
8 eggs, beaten
1 cup chopped ham, or bacon, crumbled
2 cups grated Swiss cheese
2 cups grated cheddar cheese
1 bunch of diced green onions
Mix ingredients together in a bowl then pour over the hot potatoes and bake another 30-40 minutes.
Watch the browning and do not over bake, especially if you are going to keep it warm in the oven for a while.
