Lemon Pie

My children would choose this for their birthday dessert instead of cake.

3 1/2 Tbsp. cornstarch
1 cup plus 2 Tbsp. sugar
Zest of one lemon

Combine in saucepan.

Add:
5 Tbsp. fresh lemon juice
1 Tbsp. butter
3 egg yolks, beaten

Add 1 1/2 cups boiling water very slowly. Cook until thick and glossy. Pour into a baked and cooled pie shell and let cool. Top with whipped cream.
