Nacho Chicken

I began making this recipe because I needed a gluten free entree for our extended family. It's a great recipe for large crowds and I've served it at homecomings, farewells, and Andrew's wedding dinner. Everyone enjoys it because they can create their own plate and it's so delicious!
In crock pot: place as many chicken breasts as you need (for a large group of 20, I use one boneless/skinless bag of chicken from Costco). Add 1/2 cup brown sugar and 1/2 cup water.
Let cook 4 - 6 hours on high. Remove chicken and shred it.
Add to liquid in crock pot:
2 cups salsa of your choice
1 (8 oz.) pkg. cream cheese
1 can whole corn, drained
1 can black beans, rinsed and drained
2 cups shredded cheddar cheese (I use the mexican blend)
Mix well and add chicken back into crock pot.
FOR A PARTY: You can serve over rice or chips. I serve it over rice and have chips, cut up tomatoes, cut up avocado, extra shredded cheese, and olives for toppings and I serve with a big salad, or they could make a salad themselves with shredded lettuce. You can even serve this as a chip dip.
