Oatmeal Cookies

Thea Hatfield

These are the only chocolate chip cookies I make and are a modification from a recipe from the Lion House.  I love the flavor the spices give them and the no butter/fat is nice too. Around here I always split the batch and make half with raisins and half with chocolate chips (but always with nuts) to please all parties in the house.

2 cups brown sugar
2 eggs
1/2 cup milk
1 cup applesauce
1 tsp. baking soda
1/2 tsp. salt
1 tsp. allspice
1 tsp. cloves
1 tsp. cinnamon
1 tsp. nutmeg
2 cups rolled oats
2 1/2 to 3 cups whole wheat flour
Optional: raisins, chocolate chips, nuts

Mix together sugar, eggs, milk, and applesauce. Add in baking soda, spices, oats, and 2 cups flour. Mix in additional 1/2 to 1 cup flour depending on thickness of batter until no dry flour is present. Batter should not be too runny or too thick. Add in optional raisins, chocolate chips, and/or nuts. Drop on cookie sheets using two spoons. Bake at 375 degrees for 10 - 12 minutes or until lightly browned and almost firm to the touch. Cool on rack.
