Orange Chicken Stir Fry

My daughter Karin gave me this recipe which is quick and tasty. I use dried minced garlic in almost all my cooking where there is a liquid and it works beautifully.This dish has beautiful colors.
1 pkg. chicken tenders
1 tsp. dark sesame oil
1 Tbsp. canola oil
1 cup of pea pods, strings removed
1/2 cup of orange marmalade
3 Tbsp. of soy sauce
1/4 tsp. dried ginger powder
1 garlic clove minced, or a shake of dried minced garlic
Whole almonds
Green onions, thinly sliced
Cut tenders into 1 inch pieces and stir fry in a non stick skillet on medium high heat using the sesame and canola oils. Remove from heat and add the Chinese pea pods. Mix remaining ingredients, then add to chicken. Heat until bubbly. Serve over rice garnished with green onions and whole almonds.
