Roasted Veggies

These are suggested vegetables, you can use whichever you prefer: Make sure vegetables are cut to a uniform size so they cook at the same rate.

1/2 lb. Brussels sprouts, trimmed and halved
1/2 lb. sweet potato, cubed
1/2 lb. carrots, sliced
1/2 lb. cauliflower, put in floweretts
1 yellow onion 

Put veggies in large bowl and toss with:

3 Tbsp. coconut oil, melted in microwave
1 tsp. rosemary
1 tsp. thyme
2 tsp. James Crazy Mixed Up Salt or Natures Seasoning by Morton

Place on cookie sheets covered with aluminum foil and put in oven. Bake at 425 degrees for 25 minutes. Serves 8
