This is a Greek recipe that was handed down to me by my mother-in-law.

1 large Costco pkg. of fresh spinach, stems chopped off
1/2 cup fresh mint
1/2 cup fresh parsley
5 bunches chopped green onion
6-7 raw eggs, strained
1 lb. phyllo dough
1 1/2 lb. feta cheese
3 Tbsp. olive oil
Dash of clove
Dash of cinnamon

Preheat oven to 350 degrees. Saute onions in hot olive oil.  Leave a pan of warm olive oil for later use. Mix in large bowl spinach, mint, onion, parsley and eggs, with hands, until squishy. Then add broken up feta. Oil large cookie sheet with warm oil. Lay phyllo, one piece at a time, brushing oil on top of each piece. Overlap pieces to cover corners well! Add spinach mix after layering half of the phyllo sheets, then layer with the remaining phyllo. Push down the edges. Cut top layer ONLY of phyllo in diagonals. Cook in oven until brown and the hissing stops.
