Joan Peterson
My dear friend, Jean Weiler, gave me this recipe years ago - it is a beautiful, buffet style, dessert.
Blend:
2 (8 oz.) pkgs. cream cheese, room temperature
2 cups powdered sugar
Add:
1 cup sour cream
2 tsp. vanilla
1/4 tsp. almond extract
In separate bowl : Beat until stiff:
1 cup whipping cream
1 tsp. vanilla
1 Tbsp. powdered sugar
Fold together cream cheese mixture and whipped cream.
1 Angel Food cake, broken in 1 inch pieces (homemade or store bought)
2 quarts sliced strawberries, peaches or raspberries, washed, drained, and sprinkled with 3/4 Tbsp. sugar
*In a glass bowl: Layer cake, berries, cream mixture, cake, berries, cream mixture
Garnish with a few berries arranged in a pretty way and a few mint leaves if you have them.
*I like to slice some of the strawberries long way, to form a heart shape and arrange them standing up against the glass bowl around each layer so the the presentation is a work of art.
