Sweet and Sour Chicken

Always a pleaser! I've had my daughters help with this as a dinner for group dates before a prom. It can be made ahead of time....
8 chicken breasts
Garlic salt
Cornstarch
2 or 3 eggs, beaten
Oil
Sprinkle each chicken breast with garlic salt. Dip in cornstarch and then into beaten eggs. Brown in hot oil.
Sauce:
3/4 cup white sugar
1/2 cup rice vinegar
1/4 cup pineapple juice
3 Tbsp. catsup
1 Tbsp. soy sauce
1/2 tsp. salt
1 small can pineapple tidbits
Combine first 6 ingredients in saucepan and cook over medium heat. Remove from heat and add pineapple tidbits. Place chicken in a 9 x 13 glass dish. Pour sauce over chicken. Cover with foil. Bake at 350 degrees for 1 hour. Remove foil during last 10 minutes and serve over rice.
