Cal's Thin Peanut Brittle

Cal was the candy maker in the Lambert household. His children mentioned this wonderful skill at his funeral in summer, 2017.

1 1/2 cups sugar
1/2 stick butter
1/2 cup light Karo Syrup
1/2 tsp. salt
2 cups raw peanuts
1 tsp. baking soda

1 large potato, peeled and cut in half to spread the hot brittle mixture at the end

Combine sugar, butter, Karo Syrup and salt in heavy pan. Heat and stir until ingredients are hot and bubbly. Pour in 2 cups raw peanuts and stir constantly until peanuts turn a light brown in color. Add baking soda and stir quickly, then pour onto 3 buttered cookie sheets. Quickly spread the hot brittle out using 2 halves of a potato to pull it as thin as you can as quickly as you can. Cool and store in a box or plastic container
