Tortellini Sausage Soup

This recipe came from my daughter, Sara, who lives in Ohio. It tastes even better the next day so I don't mind leftovers.
3 links Italian sausage (remove casings)
4 cloves pressed garlic
1 diced onion
In a pot cook crumbled sausage, onion, garlic with a drizzle of olive oil until onions are translucent and sausage is cooked.
Add:
1/2 cup water
2 (15 oz.) cans chicken broth
1/2 cup apple cider
1 (16 oz.) can diced tomatoes
1 (8 oz.) can tomato sauce
1 cup sliced carrots
1 tsp. each, basil and oregano
Cover and simmer for 1/2 hour.
Add:
2 medium size, grated zucchini
2 Tbsp. dried parsley
Simmer for another 15 minutes.
Add:
8 to 10 oz. pkg. cheese tortellini, cooked until tender
Serve with freshly grated Parmesan cheese and your favorite type of bread.
