Wilcox Banana Bread

This is my mother's recipe and I love it. I sometimes use applesauce for the shortening unless it's the holidays and then who's counting?!
1 3/4 cups sifted flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/3 cup shortening
2/3 cup sugar
2 eggs, beaten
1 cup mashed ripe bananas
Nuts if desired
Sift together flour, baking powder, baking soda, and salt. Beat shortening until creamy. Add sugar gradually and continue beating until light and fluffy. Add eggs and beat well. Add flour mixture alternating with bananas, a small amount at a time, beating after each addition until smooth. Turn into a well-greased loaf pan (8 1/2 x 4 1/2 x 3) and bake at 350 degrees for about 1 hour and 10 minutes.
