Winter Fruit Salad

Our favorite salad - good any time of the year!

Lemon Poppy Seed Dressing:
1/2 cup sugar
1/2 tsp. salt
1/3 cup lemon juice
1 tsp. dijon mustard
2 Tbsp. yellow onion, chopped (heaping)
2/3 cup olive oil
1 Tbsp. poppy seeds

Process everything EXCEPT the oil and poppy seeds in a blender. Keep blender running while adding oil in a slow steady stream until thick and smooth. Add poppy seeds and blend a few seconds to mix. Refrigerate until chilled.

Salad:
1-2 heads romaine lettuce, chopped
1 cup shredded mozzarella cheese
1 cup cashews
1 apple, cubed
1/2 cup dried cranberries
1 pear, cubed

Mix all ingredients. Top with dressing.
