Zucchini Chocolate Chip Cookies
Michelle Nielsen
My amazingly wonderful mother, Joan Peterson, made these when I was growing up and now I enjoy making them every year to use up some of those extra big zucchinis from my garden. I make numerous batches and freeze them so we can enjoy them later. We love them - and all my children's friends love them, and since they have a vegetable in them you can have as many as you want...
1 cup sugar
1 cup packed brown sugar
1 cup butter, softened
2 eggs
4 cups flour
2 tsp. baking soda
1 tsp. ground clove
2 tsp. cinnamon
1 tsp. salt
2 cups semi-sweet chocolate chips
2 cups peeled, seeded, grated zucchini
Cream sugar, brown sugar and butter. Add eggs and blend. Stir together flour, baking soda, clove, cinnamon, and salt. Add to creamed mixture. Stir in zucchini. Add chocolate chips just until incorporated. Bake at 375 degrees for 10-12 minutes.
