Breakfast Taquitos

I improvise this recipe with whatever I have on hand and they are always a hit! In fact, I rarely follow the recipe - just eyeballing how much to throw in of whatever I've got - and always making at least double the amount. The first time I made them my husband, Chris, hid the leftovers in the refrigerator in the garage so the boys wouldn't get to them first. That's when I new this recipe - or some improvisation of it - was a keeper!

1/2 lb. sausage ( I always cook a large pkg. and then freeze in use-able portions to just throw in)
2 cups fresh spinach, chopped
1/3 cup bell pepper - green, red, orange or yellow
6 large eggs
2 Tbsp. crumbled Feta cheese (never actually used it but I bet it would be good)
1/2 cup shredded cheese, any flavor
1/2 cup salsa, plus more for serving
7 medium flour tortillas
Cooking spray
Kosher salt

Brown sausage in large skillet over medium heat. When sausage is almost cooked through, add the chopped spinach and bell pepper and saute for a few minutes. Crack the eggs into a bowl, whisk, and add to skillet. Stir occasionally until eggs are just barely cooked through. Remove from heat and stir in the feta cheese.

Microwave tortillas for 30 seconds or until pliable. Divide filling between tortillas. Top each with a little shredded cheese and salsa. Roll up tightly and place, seam-side down, on a foil lined baking sheet. Spray tops of taquitos lightly with cooking spray and sprinkle with a little kosher salt. Bake at 425 degrees for 10-15 minutes or until crispy. Serve with extra salsa. Makes 7 taquitos.
