Great-Grandma Lucina’s Oatmeal Cookies

This recipe is from my mom’s grandma, Lucina Snow Parker. We have a copy of it written in her handwriting and it’s such a treasure!
1 cup shortening
1 ½ cups brown sugar
1 cup buttermilk * (For a chewy cookie, omit buttermilk)
2 eggs
2 cups flour
1 tsp. baking soda
½ tsp. salt
4 tsp. cinnamon
2 cups quick oats
chocolate chips, raisins, or nuts
Cream the shortening and sugar. Mix in buttermilk and eggs. Add flour, baking soda, salt, and cinnamon. Stir in oatmeal. Stir in chocolate chips, raisins, or nuts, if using. Drop by spoonfuls onto baking sheet. Bake in a 375 degree oven for 8-10 minutes. Cool completely.
