Ken's Famous Spaghetti Sauce

This spaghetti is delicious! Ken makes this for our family and we love it! He has also made it for the East football team, all 150 of them, and they love it too!
2 lbs. Italian sausage (Jimmy Dean)
1/2 to 1 small chopped onion (yellow, sweet or white)
2 to 4 garlic cloves, minced
1 (28 oz.) can diced tomatoes (Hunt's)
2 (6 oz.) cans tomato paste (Hunt's)
2 (15 oz.) cans tomato sauce (Hunt's)
1 to 2 cups water (depending on how long you simmer)
3 tsp. basil
2 tsp. dried parsley flakes
1 1/2 tsp. brown sugar
1/2 to 1 tsp. salt
1/4 to 1/2 tsp. crushed red pepper flakes
1/4 tsp. fresh course ground black pepper
1 lb. thin or regular spaghetti noodles, cooked and drained
Parmesan cheese
In a large stockpot brown Italian sausage, breaking up as you stir over medium heat. In a smaller pan soften chopped onion and minced garlic in olive oil over medium heat. To sausage add diced tomatoes, tomato paste, tomato sauce, water, basil, parsley, brown sugar, salt, crushed red pepper and black pepper; then add onion and garlic. Stir well and bring to boil, then simmer on low, stirring frequently for at least 1 hour. A longer simmer makes for a better sauce, but it will burn if not stirred occasionally. Serve over noodles and garnish with parmesan cheese.
