This recipe is from a General Relief Society Cookbook. I've used this one on many occasions - it's easy and tastes good!
1/4 cup butter
6 chicken breasts, boneless
1 (11 oz.) can mandarin oranges
1/4 cup soy sauce
1 Tbsp. corn starch
1 tsp. mustard (prepared)
1 Tbsp. vinegar
1/4 cup pineapple or apricot preserves
1/4 tsp. instant garlic powder
1 Tbsp. instant minced onion
1/2 cup diced green peppers
Saute chicken in butter until brown. Drain oranges and retain liquid. Stir in 1/2 cup liquid and soy sauce into cornstarch.
Add mustard, vinegar, pineapple preserves, garlic powder and onions. Pour sauce around chicken. Cook on stove top, covered,
for 30 minutes. Add green peppers and oranges and cook 5 minutes more. Serve with rice. Serves 6
