Oatmeal Cake
Diane McKean
A recipe from my dear Aunt Kathleen Bartholomew from the tiny town of Fayette, Utah, that I received many, many years ago.
1 cup oatmeal
1 1/2 cups boiling water
Combine and set aside.
1/2 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs
Mix and then add the oatmeal mixture.
1 1/2 cups flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
Combine dry ingredients and add to wet mixture and mix by hand well. Pour mixture into a greased and floured 9 x 13 pan.
Topping:
1 cup brown sugar
1 cup semi-sweet chocolate chips
1 cup finely ground (in a blender) walnuts
Mix and sprinkle on top of cake. Bake at 350 degrees for 30 minutes.
