Swedish Pancakes

This is a standby that I make for myself and my companions in the mission field. It's quick, easy, and delicious! My mom sends me vanilla so that I can make it, because I haven't been able to find vanilla in Germany.

3 eggs
1 tsp. vanilla
3 Tbsp. powdered sugar
1 1/4 cups flour
2 1/2 cups milk
1/2 tsp. salt

Mix all ingredients together in a bowl with a whisk, until well blended. Heat a griddle or fry pan to 350 degrees. Butter the pan immediately before pouring approximately 1/4 cup of mixture on to griddle in a circle shape. When cooked on one side (approximately 3 minutes), flip the pancake. Remove pancake from pan, and repeat the process until the batter is gone. Pancakes are thin and crepe-like. Serve warm with butter, powdered sugar, lemon juice and syrup.
