Trust Me On These Fish Tacos

While Chris was doing Med School in Houston, Texas I loved to kill my time in the Central Market Whole Foods Grocery Store. It is still one of my favorite places today. The gourmet grocery store would occasionally have tables set up with new recipes to try and this was one of the surprisingly amazing ideas that our family uses a lot. The variety of fresh vegetables make this quick and easy meal feel healthy but taste delicious. And- it's a lot easier than cooking fresh fish while avoiding the stinky residue in the kitchen.
Serves 2 tacos a person
6 Fish sticks per person
1 can black beans; rinsed and drained
Small Tortillas
Mayonnaise
Lemons or Limes
Any toppings you would enjoy on fish tacos. Our favorites are:
Sliced avocado
Sliced green onions
Chopped tomatos
Chopped red onion
Chopped mangos
Chopped cilantro
Shredded cabbage
Cook the frozen fish sticks according to package directions.While fish is cooking prep toppings.
Spread a small amount of mayo on each tortilla with a squeeze of lemon (or lime). Place three fish sticks and one spoonful of black beans on each tortilla. Add toppings. Bon Appètite.
